Iced Vovo Slice

We eat food to nourish and for taste. We eat food to provide energy and nutrients. But we also eat food for comfort. Food can remind you of someone lost and it can evoke feelings of nostalgia and love.

Iced Vovo’s are a biscuit that my grandparents always had around. So when I was creating this recipe I wanted it to be something special, in the hope it brought back some memories for you too. This recipe is clearly not a traditional biscuit, half baked, half raw, full flavour. It uses raspberries and it has the addition of dark chocolate to give it a little kick.

This recipe is dairy free and refined sugar free.

Ingredients (Makes 16)

Biscuit Base

  • 1.5 cups almond meal
  • ½ cup brazil nuts
  • ½ cup coconut oil
  • 4 dates, soaked


  • ½ cup desiccated coconut
  • 1 punnet raspberries
  • ½ cup raw cashews, soaked
  • 1 TBS maple syrup
  • 1 tsp vanilla bean paste


  • Loving Earth dark chocolate, melted


1.Preheat oven to 180ºC.

2.Put the cashews for the filling in water and allow to soak for at least one hour.

3.Deseed and soak dates in warm for about 10mins.

4.Pulse brazil nuts in a food processor so they are broken down but don’t blend until they are a meal, keep it a little chunky.

5.Drain dates and add to brazil nuts and blend until combined.

6.Place all base ingredients in a bowl.

7.Using your hands, mix, combine and knead together the ingredients until it forms a well formed consistency.

8.Press the base into a lined baking tray, it should be about 5mm thick.

9.Place in the oven for 15mins.

10.Remove the biscuit base from the oven and allow to cool completely in the tin (about 30-45mins)

11.Drain the cashews and combine with the filling ingredients in a food processor. Blitz until well combined.

12.Spread evenly over the base in the baking tin.

13.Pop in the freezer for an hour or so to set.

14.Remove from the freezer and slice into 2-3cm squares.

15.Melt the dark chocolate in a bowl over boiling water. Drizzle over each piece of slice.

16.Pop back in the freezer for around 10mins.

17.Keep in the freezer or fridge depending on your preferred eating consistency.
